Is this a Solus specific restriction or a generic linux issue? Commonly I would have thought that if it can be implemented with a click I can be reversed as well with a click or two, and not jumping through the listed hoops.

It's a generic issue (just google something like remove encryption).
I saw on the cryptsetup man page
there is a --decrypt option but it looks quite dangerous (in all cases you have to backup your data):
--decrypt Remove encryption (decrypt already encrypted device and remove LUKS header).
WARNING: This is destructive operation and cannot be reverted.
